Nikaku A renowned sushi restaurant from Kitakyushu, Japan, boasting a prestigious two-Michelin-star rating, Nikaku is dedicated to preserving the ancient art of sushi-making. The heart of the restaurant lies in the meticulous techniques passed down through generations, with chefs employing the Honte-gaeshi method—a skill that involves rapid hand and finger movements to prevent body heat from transferring excessively to the fish. Integrated with the principle of Anbai, or achieving the perfect balance between salt and vinegar in sushi rice, this process brings out the unique sweetness and texture of each type of fish, allowing their flavors to shine through. The result is a harmonious and well-balanced taste that adheres to the authentic traditional standards.

Here, we place great importance on the sources of our ingredients. Nearly all of our fish and seafood are carefully selected directly from the abundant waters around Kyushu and the Kanmon Strait (Kanmon Kaikyo), also known as the Shimonoseki Strait, which are renowned for their exceptional freshness and rich flavors. These ingredients will be delivered by air to the Bangkok store on the same day to ensure that guests experience the same freshness and quality as at the main branch in Japan.

Nigaku offers a quiet and private atmosphere, allowing you to fully focus on the flavors of the food and the chef's culinary artistry. A variety of omakase courses are available to suit every occasion. From a 12-course lunch to a full 21-course meal for special occasions, every step of the service is meticulously crafted to reflect the Omotenashi philosophy, which prioritizes guest care above all else.✨
