This is evident in signature dishes like the Oh-Toro Uni Truffle Special Roll, which combines premium ingredients such as otoro (fatty tuna). Uni and black truffle, perfectly complemented by a karashi ponzu egg yolk sauce, or the Furano Wagyu menu, featuring specially selected Wagyu beef from cows raised with care amidst the pristine nature of Furano, ensuring high-quality meat that the chef proudly presents.



There is also a Teppanyaki menu where the chef creates dishes on a hot grill in an exciting way. Premium dishes featuring fresh sea urchin include pasta with sea urchin cream sauce, shrimp with sea urchin sauce, and Hokkaido scallops with sea urchin sauce. In addition, there is a menu featuring Hokkaido oysters prepared in a variety of styles, including sushi topped with ponzu sauce and gratin with mentaiko cream. Each dish is beautifully presented, reflecting the art of fine dining and emphasizing true exclusivity.
